I cannot understand the reasoning behind making tofu look like meat. I like tofu and I like it in it's natural state. when I ordered this noodles with tofu at one of the local Vietnamese restaurants this is not what I was expecting.

It actually was pretty tasty but I was really in the mood for real tofu looking tofu. :)

wow i've never seen vegetarian buhn before. that looks yummy. in santa cruz they have an all you can eat thai place that has those veggie tofu noodle fresh rolls that are super yummy.

Actually the noodles are rice noodles. The brown stuff is the tofu. I have never tried tofu noodles, but it sounds good.

Was it tofu? It looks like seitan to me.

It may have been seitan. It had a slight meat texture, but the menu said tofu. I guess that if they had put "seitan" or "mock-beef" in the menu I would not have ordered it.

Mmmm ... TOFU ...
Tofu generally has a pretty neutral taste by itself, so it's often flavored or processed in some way. What did this stuff taste like?

Have you heard about Tofu Shirataki? It is a low-carb pasta alternative. It comes in the shape of spaghetti, fettuccine, and angel-hair.
